The Ultimate Crunchy Chocolatty Peanut Butter Cookies

These should be called cookies for difficult moments. They are insanely yummy…but they also develop dependance. I think that to judge them you must try the recipe, which is as always very easy and with basic ingredients. Ingredients:

  • 130 gr crunchy peanut butter
  • 50 gr coconut oil
  • 30 gr agave syrup
  • 50 gr coconut sugar
  • 150 gr rolled oats
  • 1 tablespoons buckwheat flour
  • 1 tablespoon cacao powder
  • 4 dates
  • 1 teaspoon vanilla extract or powder
  • pinch of pink Himalayan salt
  • Optional: you can add some dark chocolate chips

 

Method:

  1. Preheat the oven at 180°
  2. In a food processor, mix the dates with a teaspoon of water for few seconds, until you create a paste
  3. In a pot, heat on a low temperature coconut oil, peanut butter, agave, coconut sugar, dates’ paste
  4. Once it’s melted, remove from the heat and combine with oats, flour and cacao
  5. Take 1/3 of the dough and blend it until smooth in the food processor
  6. Combine again the two doughs (and the chocolate chips-optional)
  7. Give it the shape of cookies
  8. Bake for 12 minutes, until you see that the edges start to be crispy
  9. Let them cool down completely! This is compulsory in order not to break your cookies

 

Why we like them:

  • Well, because they are greedy…such a treat! But still healthy 🙂
  • Because they are not the empty carbs and sugar you do not want to include in your diet
  • Because they can be a perfect breakfast, a dessert or just a snack for the afternoon
  • Because if kept in a closed jar they last for a good week…if you haven’t eaten them all before
