Easy Vegan Brownies

Could a chocolate lover not create some vegan brownies?! The thing is that we don’t them too heavy…so no chocolate in it, only cacao powder. Moreover, although we cannot wait to be at home to bake and create new recipes, most of the times we just go very simple, with extremely basic ingredients! At least there are no excuses not to try!!

  • 4 tbsp almond butter
  • 2 tbsp chia seeds, previously soaked
  • 1/3 cup cacao powder
  • 1 cup flour: 1/3 cup buckwheat flour + 2/3 cup oat flour
  • 5 tbsp agave syrup
  • 5 tbsp non diary milk (almond milk for this recipe)
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 4 Medjool dates, pitted
  • pinch of salt

  1. Preheat the oven at 180°
  2. Place everything in the food processor, mix until smooth
  3. Add some extra non diary milk if it seems too thick. The consistency has to be dense but not as much as it would be for cookie dough, since you want to distribute it in a baking tray and have it all the same high
  4. Place in the baking tray, give it a little shake to flatten
  5. Bake for 30 minutes at 180°
  6. They last in the fridge for one week. keep refrigerated, take out one hour before serving
