Vegan Coconut Cookies

If you are passionate about coconut you will love these cookies, because you have here this magic ingredient in all forms! You can of course substitute the milk if you don’t have the coconut one, the result is going to be as good, no worries 🙂 

Ingredients: 

  • 100 gr coconut flour 
  • 100 gr oats
  • 6 tablespoons agave 
  • 3 tablespoons cashew butter (or any nut butter)
  • 3 tablespoons of coconut oil, melted
  • 7 tablespoons coconut milk (or another non diary milk)
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 50 gr dark chocolate (vegan if you prefer)

Method

  1. Soak the chia seeds in three table spoons of water
  2. Combine the flours, add cashew butter, coconut milk, agave, vanilla extract and the chia seeds soaked. Blend everything in the mixer, less than one minute is more than enough.
  3. Cut the chocolate into small chunks (if you have chocolate drops it’s even easier). Add these to the dough and combine with your hands
  4. Give the shape of cookies and bake for 20 minutes, until they are slightly brown
