Overnight Pear and Beetroot Oats

I tried this recipe couple of times last year and I loved it. Then I simply forgot about it. Few days ago I had my blood test done and I am the kind of person that is incredibly scared of it, plus I feel really weak after (maybe it’s all psychological?!). Anyways, the evening before the test I knew I would need a breakfast that could give me all the energy and the nutrients – beetroots are high in iron. The result was successful: first I enjoyed it a lot and second I felt really good after!! P.S. You don’t need a blood test to try the recipe 😉


  • 1 pear (1 apple works perfectly too)
  • 1 cooked beetroot
  • 1 portion of oats (1 cup for me)
  • 1 cup almond milk
  • 2 tablespoons chia seeds 
  • 1 tablespoons sultanas (optional)
  • 1 teaspoon cinnamon
  • 1 tablespoon agave syrup or maple syrup


  1. Blend the pear and the beetroot until you reach a sort of compote 
  2. In a jar put the oats, the chia seeds, the cinnamon, pear and beetroot compote, the sultanas and the almond milk (the liquid must cover all the dry ingredients), stir well with a spoon. 
  3. Cover and refrigerate overnight 
  4. The next morning, stir a bit, microwave for 30 seconds if you like it warm (I honestly enjoy it cold)
  5. Add the agave or maple syrup and enjoy 
  6. I topped it with some extra sultanas and blueberries to make it even more yummy

Why we like it:

  • It adds the benefits of the beetroots to your breakfast
  • It’s very practical because you prepare it the evening before. Moreover, you can top it with your favorite nut butters and fresh fruit 
  • It’s definitely a treat! It’s a breakfast that tastes like dessert
