Christmas Cookies

New cookie reciepe! This time, with a Christmas twist, thanks to some spices used to add some nice flavor. Baking them on Sunday is very relaxing for me…I focus on what relaxes me the most and on things that I love doing…baking is one of them, and if in the meantime I can feel the Christmas atmosphere I am even happier 🙂 


  • 100 gr almonds
  • 4 apples
  • 2 and a half cups of jumbo oats
  • 3 tablespoons of honey (or maple syrup)
  • half cup sultanas
  • pinch of salt
  • 1 tablespoon coconut oil
  • 1 and a half teaspoon of Christmas spice mix (which is very similar to pumpkin spice and it’s a special combination -with more ginger- that they sell at “The Spice Shop”)


  1. Roast the almonds in a pan
  2. Peel the apples
  3. In a food processor, place apples, oats, roasted almonds and coconut oil not melted
  4. mix well until the apples break completely and you have a sticky paste
  5. Add spices, salt, honey (you can use maple syrup if you prefer)
  6. Mix a bit more, add the sultanas, another little blend and the dough is ready
  7. Scoop some of the dough giving the shape of cookies (mine are quite big and thick)
  8. Bake for 35 minutes at 180°, until they are gold and crispy outside

Why we like it:

  • They are very smooth and soft inside and crunchy outside
  • They are the perfect snack, easy to digest but that allow you to get a good energy thanks to the oats and almonds
